Danny Beck graduated from Kendall Culinary School in 1993. He worked for Planet Hollywood as Corporate Opening Team member, then opened four restaurants for the company, including Planet Hollywood Las Vegas in Ceasar's Palace. After a year as sous chef, he moved to Nashville and was Executive Chef at Nashville Country Club. He returned to Chicago in 1996, opened House of Blues Chicago as Sous Chef, then became Executive Chef. In 1998, he became owner and operator of Toon's Bar & Grill in Chicago's Wrigleyville neighborhood. GO CUBS!!!

Paul Fehribach began his career as chef at Chapman's Restaurant in Bloomington, Indiana in 1992, heading up the popular French-Continental kitchen for three years. In 1995, He opened the famous Laughing Planet Cafe in Bloomington with cafe owner Richard Satnick. The Laughing Planet has been featured nationally on NPR, as well as in the New York Times and Wall Street Journal. Paul moved to Chicago in 1996 and soon joined the hit Hi Ricky Asia Noodle Shops, where he worked until 2002. In August 2002 he joined Schubas Tavern and the Harmony Grill to do, as he describes it, "serious regional American home cooking."

Craig Cameron
Hailing from Louisiana, Craig and his co-owner brothers (Darrell and Michael) learned how to cook their amazing Jambalaya, Po-Boy sandwiches, pecan pies and other assorted masterpieces from a great teacher—their grandmother. Opened in early 2003, Jambalaya's is already making their mark in Chicago. Located in Wicker Park, this small but mighty restaurant is quickly earning its well-deserved "word-of-mouth" reputation for delicious, no-frills authentic bayou cuisine.

JAMBALAYA'S WENT OUT OF BUSINESS IN 2003. We wish Craig and his brothers all the best, and hope they consider opening another fine restaurant soon.

Andy Vaitkus of Blue Bayou spent 12 years at Chicago's Mercantile Exchange. "Then, I decided to do what I really love, which is cooking." After completing his Professional Culinary Training at The Chicago Cooking and Hospitality Institute, Andy worked for Radisson Hotels. A special interest of his is cooking wild game and fish. When not in the kitchen, Andy is an avid golfer and outdoorsman. "We opened Blue Bayou in February 2003," Andy says, "hoping to bring a little New Orleans fun and flair to Southport. Let the good times roll!"

Joel Nickson

Joel Nickson started working for a soul food restaurant at age 15 in North Carolina. He then apprenticed at French restaurants and hotels in and around New York City before moving West. In San Francisco, he worked at the Fairmont, then Ernie’s under chef Jackie Robert; in Palm Springs, he held the position of Food and Beverage Manager for two years at La Quinta Resort. Moving back to North Carolina, Joel worked as Chef in Wrightsville Beach for the Blockade Runner Hotel for another three years. At the urging of his brothers in Chicago, he came to the Windy City and opened the Wishbone on Grand Ave. in 1990. After outgrowing this original location, he now owns two separate Wishbones - one in Wrigleyville, and another in Chicago's West Loop.

Larry Tucker dishes up some killer catfish fillet and seafood jambalaya at L.T.'s Grill — as well as the famous Twin Marinated Pork Chop he created while executive chef at Ditka's. In addition to working at the coach's place, Tucker has served as executive chef at Lake View's beloved Biasetti's, executive chef and owner of N.N. Spice Island & N.N. Smokehouse, partner and owner of Minnie's Old World Deli, and head chef at The Manhattan Tavern.

"KING OF THE BLUES VIOLIN"

With no way to label the music as any particular style, Lonesome Halos perform "American Maverick" music. Writing & playing what they feel, some say they hear strains of Tom Petty, Bruce Springsteen, Lynard Skynyrd, Blues Traveler, Neil Young, Hank Williams—even a little rockabilly, too.

Kelly Kessler is the instigator of the Wichita Shut-Ins. She helped frontload the Chicago country music revival during her stint with the Texas Rubies, and stoked the flames with her Honky Tonk Living Room live music series at the Hideout (Chicago).
Lawrence Peters is the most dapper of the Shut-Ins. Equally at home with Stanley-style bluegrass and Ray Price crooners, Lawrence has a honeyed baritone that will stop you in your tracks, power-fully recalling the glory days of country.


The Siderunners didn‘t grow up in the country, don't ride horses (and don‘t pretend to), but they do play country music—and are proud of it.

Today, opening shows for bluesman Teddy Morgan, rockabilly wildmen The Legendary Shack Shakers, and singer-songwriters Pieta Brown and Bo Ramsey, he is a sharp-dressed smooth-talking storytelling songwriter with vocals extraordinaire and rockin' rhythm guitar to spare, more unique than any flavor of the week, loaded with yodels just add up the totals, hillbilly music as it was and always will be: soulful, rhythmic, and timeless, yet always on time, this master of rhyme, Mr. Kent Rose.

Jon Langford is a musician & artist, and serious about his cooking, too (just ask him!). Jon plays in a number of acclaimed bands, including the Waco Brothers and Mekons.
